It's a Rogue World feat. Infused Cocktails for Cinco de Mayo

Hi high! We spent many years celebrating Cinco de Mayo with tequila based cocktails. We spent those same years suffering mercilessly the next day. This year we teach you how to make your own THC infused simple syrup so that you can create alcohol-free margaritas and scores of other drinks. We will also turn you on to our current read Care and Feeding: A Memoir by Laurie Woolever (one-time assistant to Mario Batali and then Anthony Bourdain). Plus we reveal our current fashion obsession. Let's get to it!

How to Make Your Own Cannabis Infused Simple Syrup

Ingredients:

  • 3.5g – 7g dried cannabis (we suggest starting low and slow)

  • 1 cup sugar (we like raw sugar but note that your simple syrup will not be clear)

  • 2 cups water

How To:

  • First decarboxylate your cannabis to activate the THC. In THIS POST we tell you how to do it using a sous vide. Here we'll detail the baking sheet method.

  • Preheat your oven to 220 -240ºF. Line a baking tray with parchment paper then evenly spread your roughly ground cannabis on top. Cover the tray with foil and tightly seal it. If you want to reduce the smell while baking, we suggest using a tightly sealed jar and putting the jar on a baking sheet. Bake in the preheated oven for 30-45 minutes. Shake the tray/jar halfway through to help the cannabis decarb evenly.

  • Bring the water to a boil on low heat and add the sugar. Stir frequently until the sugar is fully dissolved in the water.

  • Once the sugar has dissolved, add your decarboxylated cannabis and let it simmer for 10 minutes. Stir frequently. Do not overboil. Note that too-high temps can damage the THC and other cannabinoids.

  • Take the hot syrup off the heat and allow to cool down. Prepare a small strainer or use a cheese cloth - either will strain out the cannabis bits from the syrup.

  • Pour the warm syrup through your strainer or cheese cloth to remove the weed bits.
  • When the syrup is cooled, it's ready to use. Store any remaining syrup in the refrigerator.

Our Current Read: Care and Feeding: A Memoir by Laurie Woolever

Laurie Woolever, the one time assistant of Mario Batali and then Anthony Bourdain was privy to a lot of restaurant drama and over-the-top behaviors. But somehow she doesn't let her proximity to celebrity or its toxicity overwhelm the riveting story of her own successes, failures, and very raw struggles. Hers is a story worth reading and she delivers it with acerbic wit.
