Readers who've been following along know that we love to share recipes- and usually one where you can utilize some canna-butter or infused oil. We've already provided the recipe for making canna-butter, so this week we'll teach you how to make weed infused oil. Cannabis Infused Oil*
*you will need a sous vide for this recipe
Ingredients

3.5 grams cannabis (approx 1/8 ounce), finely ground using a grinder

3 tbsp distilled water

1 cup best-quality extra-virgin olive oil (we love Frantoia)
How To

Set the sous vide to 200°F and place in a medium saucepan filled halfway with tap water.

Using a high-quality grinder, grind the cannabis buds to a fine grind and place in a vacuum-sealable bag with the 3 tbsp of distilled water. Seal the bag completely (using a vacuum sealer if you have one).

When the circulator reaches 200°F, drop the sealed bag into the water and decarb for 30 minutes, rotating the bag every 5 to 10 minutes.

Transfer the bag to a bowl of ice water to stop the cooking and to preserve the terpenes; let cool.

Set a fine-mesh sieve over a bowl; strain and reserve the cannabis, discarding the liquid

In a small saucepan, combine oil and cannabis and bring to a gentle simmer over medium heat; continue to cook for 20 minutes, stirring often. Remove saucepan from the heat and let steep for 30 minutes more.

Strain the mixture through a fine-mesh sieve into a resealable heat-proof food container with an airtight lid. Keep refrigerated and use within 30 days.

This dark reimagining of the meeting of the Spanish conquistador Hernán Cortés and his captains with the Aztec emperor Moctezuma and his entourage in Tenoxtitlan comes very close to being a perfect book. Enrigue’s depiction of the arrogant and uncivilized Cortés and the hallucinatory and volatile Moctezuma so deftly humanizes these otherwise godly characters that, was it not for fear of them, you'd want to inhabit their world. The story includes a large dose of poetic license, as the end is not one you'll find in the history books, but is stunning and magical none-the-less. Highly recommend.
